Ingredients
1 slice of Wholemeal seeded brown bread
1-2 tbsp tomato puree
Cheddar cheese
Grounded black pepper
1/2 fresh green chilli (optional)
1 small red onion
1 small diced fresh tomato
Sweetcorn
Sprinkle of Fresh coriander
Method
1. Spread soft butter on one side of the wholemeal bread, grill until golden brown on a low-sodium flame
2. once grilled, turn the bread to the ungrilled side. Spread tomato puree all over.
3. Sprinkle grated cheese on top of the bread
4. Add grounded black pepper for a slight kick of flavour
5. Slice red onions and chop tomatoes
6. Add fresh green chilli if you want extra heat
7. Add red onions
8. Sprinkle chopped/diced and deseeded fresh tomatoes
9. Sprinkle sweetcorn
10. Sprinkle fresh coriander for added flavour
11. Grill on a medium flame 5-10 min until sizzling hot
Voila, a light, enjoyable and flavoursome brunch!
